This is the recipe to make a base ingredient that can be used in a variety of dishes.
Burke's Recipe
Ingredients
- 1 cup raw pecans
- 4 cups water
- 2 tablespoons maple syrup
- ½ teaspoon vanilla extract
- ½ teaspoon salt
- ¾ cup demerara sugar
- ½ tablespoon cinnamon
Directions
- Roast pecans on a rimmed baking sheet at 350 degrees for 5-8 minutes, stirring halfway
- Let pecans cool
- Add pecans to blender with 2 cups of water and blend until creamy/smooth (~1 minute)
- Add remaining water, maple syrup, vanilla, salt and blend again
- Strain through nut milk bag into medium saucepan. Add sugar and cinnamon
- Heat on low until sugar is dissolved
- Increase to medium heat and simmer for 30-40 minutes until it is reduced by half, but not caramel. Skim any foam from the top. Be careful not to get any sugar crystals on the side of the pan to avoid cracking the mix
- Move to jar to cool, before closing lid
